sheet to prove it! The newest to the May's family,
this Straight Rye Whiskey honors Clyde's craft and
dedication. Made from 95 percent rye and 5 percent
barley, this rye whiskey is aged a minimum of three
years. With floral, spice and citrus notes, the finish is
soft and smooth bringing out black pepper and wood
spice.

too. Using local apples, they press, soak, ferment and
distill to produce a brandy with a clean fruit finish.
By allowing the spirit to macerate with the apples in

Mountain Blackstrap Dark Rum. Both blackstrap and
high test molasses are fermented before being twice
distilled. The rum is then aged in a foeder, or large
wooden vessel, with imported French oak and American
oak to add complexity. This blackstrap rum has notes of
butterscotch, clove and vanilla.

Rúa, or 'red' in Gaelic, is an apt name for this richly
hued American single malt whiskey. Hand-crafted
from only three ingredients - yeast, exceptionally
pure spring water and 100 percent organic, non-GMO
two-row Pilsner barley, Rúa, gets its color from aging in
Char No.3 American White Oak barrels. The result is a
full-bodied whiskey with a long, sweet finish.

This additional rum offering from Devil's Backbone
Distilling Company has a fruitier note. High test and
blackstrap molasses are brewed with some sugar cane
and allowed to ferment at slightly higher temperatures
to produce a sweeter character. Mountain Cane
Rum is twice distilled in whiskey stills to allow that
complexity to shine.
