going to have a rum coming out in the fall." Rum,
of course, is made from sugar cane rather than
grain, but it will be finished in used Steeple Ridge
bourbon barrels.
And early in 2020, they distilled the first 10 runs
of Steeple Ridge rye and placed in it barrels to age
for a year and half or so. So now Hoffmann - and
rye whiskey fans - just have to wait for the aging
to work its magic.

IOWA DISTILLING, CUMMING
"Iowa Distilling Company is one of the first
micro-distilleries in the state of Iowa," says Brooke
Avila. "We are proud of local roots and have committed to not spending a marketing dollar outside
of Iowa until we are in all 99 counties" - which is
targeted for the end of 2020.
The distillery produces eight different spirits (as
well as two products for other clients): a gluten-free
vodka, Zone; the flagship cinnamon whiskey,
Prairie Fire; bourbon, rum, moonshine and more.
In late 2019, Iowa Distilling Company offered the
limited-release Double Oak Rye Whiskey (available
at the distillery's craft cocktail room only). The
Double Oak had aged for more than four years, then
was finished in Iowa Distilling bourbon barrels.
"At the end of the day, we hope people are
having fun when enjoying our spirits," says Avila.
"It is a fun industry to be part of and our pleasure
to serve the Iowa community."

History infuses Foundry Distilling, from founder
Scott Bush's great grandfather-born in Templeton

and a "producer" of rye whiskey during Prohibition
-to the distillery's location at the "Foundry" building, constructed in 1899 to repair rail cars. Bush
also founded and built Templeton Rye; he sold
controlling interest in 2016 and started Foundry
Distilling Company.
The Foundry line begins with the core Foundry
Collection: a vodka, gin and rum. Next up is the
Heritage Collection, celebrating Iowa people,
places and events.
And in the quest to be innovative, the distillery
offers spirit enthusiasts opportunities to produce
customizable private barrels of whiskey.
In addition, the business joins with other distillers and brewers to produce unique collaborative
offerings. In brewery partnerships, the brewers
produce the wort (like a distiller's mash) from one
of their popular beers, and then Foundry ferments,
distills and ages it.
In 2020, brewer collaborations include familiar
brands: Boulevard Brewing Wheat; then Stone
Arrogant Bastard Ale; next a collaboration using
Surly Furious IPA; and in early 2021, Left Hand Milk
Stout.
In response to the nation's coronavirus crisis,
Foundry switched to production of hand sanitizer,
which kept employees "crazy busy, trying to fill
orders," says general manager Max Hytone. The
distillery offered the sanitizer free to customers
bringing in a 12-ounce container, following careful
protocol to keep employees and the community
safe.
On Facebook, the distillery also reminded followers, "Now more than ever it is important to
support local."
