Pina Colada 3 oz. rum 2 oz. coconut cream 2 oz. pineapple juice 1 ½ cups ice 1 pineapple Put ice, rum, juice, coconut cream and ½ cup diced pineapple into blender. Blend until velvety and frosty. Pour into glasses and garnish with pineapple wedges. Makes 2 servings. The Margarita 6 oz. tequila Add all ingredients to a blender, process until smooth and frothy, and garnish with a lime wedge. Makes 4 servings. 4 oz. triple sec 1 cup lime juice 1 lime 1/8 cup sea salt 6 cups ice Sugar or simple syrup to taste (optional) Rock Lobster 36 IOWA SPIRITS 1 ½ oz. coconut rum ½ ripe banana ¼ oz. dark rum Dash pineapple juice ¾ oz. banana liqueur Dash orange juice ½ oz. grenadine 1 cup ice Toss everything but the dark rum into a blender. Process until creamy and pour into a chilled highball glass. Float dark rum on top by pouring it over a bar spoon. Makes 2 servings.
