fresh coffee grounds can be used to make coffee
liqueur; citrus rinds provide the base for oleo-saccharum, a sweet citrus oil that adds a divine element
to food and beverages; and reserved chickpea
liquid makes aquafaba, a vegan-friendly egg-white
replacement for food and cocktail recipes.
Cocktails aged in barrels. The barrel-aged
cocktail trend has several years under its belt now,
but it shows no sign of abating. Plus, the practice
has moved into the do-it-yourself realm. Aging a
cocktail in a small wooden barrel for as little as a
week transforms the drink-turning, say, a Negroni,
from a bright, bittersweet aperitif into a mellow,
complex magical potion.
Picture-perfect drinks. Which cocktail picture on social media gets more likes-the Manhattan
in a plain rocks glass or a smoking Spiced G&T,
bedecked with a cinnamon stick, star anise and a
clove-studded orange peel? A picture-perfect presentation can boost a bar's reputation, so brands
and bartenders continue to play around with unique
vessels, colorful garnishes and eye-catching effects
such as fire and smoke.

Add liquid ingredients to a cocktail shaker
and shake vigorously. Pour into a big glass
or goblet filled with ice. Grate fresh nutmeg
on top and enjoy!
