TURKEY GRAVY

A little spirit in the gravy? Sure!
▷▷1 STICK (8 TABLESPOONS) UNSALTED
BUTTER
▷▷1½ CUPS CHOPPED YELLOW ONION
(APPROXIMATELY 2 ONIONS)
▷▷¼ CUP FLOUR
▷▷2 CUPS HEATED DEFATTED TURKEY
DRIPPINGS (USE CHICKEN BROTH TO
SUPPLEMENT TO GET 2 CUPS)
▷▷1 TABLESPOON COGNAC OR BRANDY
▷▷1 TABLESPOON WHITE WINE, OPTIONAL
▷▷1 TABLESPOON HEAVY CREAM,
OPTIONAL
▷▷1 TEASPOON KOSHER SALT
▷▷½ TEASPOON FRESHLY GROUND
BLACK PEPPER

▷▷2 TABLESPOONS CHOPPED FRESH
HERBS (THYME, SAGE, ROSEMARY AND/
OR PARSLEY)

Melt the butter in a large sauté pan
over medium-low heat. Add onions
and cook for 12 to 15 minutes, stirring
frequently, until onions are lightly
browned. Sprinkle the flour into
the pan, whisk; add the salt and
pepper. Cook for 2 to 3 minutes,
stirring constantly. Add the turkey/
chicken mixture and liquor and cook
uncovered for 4 to 5 minutes, until
thickened. Add the wine, cream, salt,
pepper and herbs. Serve.

BRANDIED SWEET POTATOES
The alcohol cooks off, but the rich,
luscious taste of brandy remains.
