I've made the pies for Thanksgiving
since I was 23 and my apple pie
has had the most changes along
the way. When I was a Virginia ABC
store manager, I started adding a
little bit of this kind of spirit or that
kind of spirit to my baking to see if
my family enjoyed the end results.
So far, the Drunken Apple Pie has
been the favorite and requested
time and time again.
▷ STANDARD 8- OR 9-INCH PIE
CRUST
▷ 1/3 CUP PLUS 1 TABLESPOON
SHORTENING
▷ 1 CUP ALL-PURPOSE FLOUR
▷ ½ TEASPOON SALT
▷ 2 TO 3 TABLESPOONS COLD
WATER
Cut shortening into flour and
salt until pieces are the size of
small peas. Sprinkle in water, 1
tablespoon at a time, tossing with
a fork until all flour is moistened
and the pastry almost cleans the
sides of the bowl. Gather pastry
into a ball: roll out pastry with a
floured-covered rolling pin. Fold
pastry into quarters; unfold and
ease into plate, pressing firmly
against bottom and sides. I place
my pie plate into the freezer while
I prepare my apples; this will allow
the butter to not melt and for you
to achieve a flaky crust.

Cake
▷ 1 BOX DEVIL'S FOOD CAKE MIX
▷ ½ CUP OF VEGETABLE OIL
▷ 3 LARGE EGGS
▷ ¾ CUP BAILEYS ORIGINAL IRISH CREAM
Preheat oven to 350 degrees. Line muffin tin with cupcake liners. In
a large bowl, combine cake mix, vegetable oil, eggs and Baileys. Fill
cupcake liners about ¾ full and bake according to package directions.
Frosting
▷ 1 CUP BUTTER, SOFTENED
▷ 1 TEASPOON VANILLA EXTRACT
▷ ½ TEASPOON SALT
▷ 5 CUPS POWDERED SUGAR
▷ ½ CUP BAILEYS ORIGINAL IRISH CREAM
▷ ¼ CUP COCOA POWDER
▷ CHOCOLATE SAUCE, PREPARED
In a large bowl, combine butter, vanilla, salt, cocoa powder and one
cup of powdered sugar. Beat with an electric mixer until smooth.
Gradually add the remaining four cups of powdered sugar, alternating
with small amounts of the Baileys. Beat until fluffy.
Pipe onto cupcakes and garnish with chocolate sauce.
