distillery's previous port barrel-finished
whiskey, which was named World's
Best Bourbon by Whisky Magazine in
2016. Also like the previous bourbon,
Isaac Bowman Bourbon uses a blend of
different wineries and barrel types.
" However, we adjusted the method
just a touch to allow for greater
consistency in the batches, " explains
Prewitt. " Early on, when we developed
the Isaac, we decided to use a soleratype
process that is traditionally used by
some port makers. We blend our portfinished
bourbon in a giant oak foeder
[an extra-large barrel] that we have
never emptied since we started making
the Isaac Bowman Port Finish in 2017.
We just continue to blend on top while
pulling requirements for bottling. "
Kahn notes, " The Thomas S. Moore
expressions really get to highlight the
best of the science that the master
distiller can provide as well as the best
of the art that the master blender
provides. These first releases were
the most interesting and challenging
exercise in blending that I have ever
encountered, and I am very fond of, and
proud of, the results. "
A Learning Process
For the first release in the Maison de
Cuivre series, Reservoir bottled all three
of the Merlot barrels from Wineworks.
For the second release, Reservoir bottled
only one of the three Meritage barrels
that had been aging bourbon. The third
release used another of those three
Meritage barrels, after the whiskey had
aged longer.
A side-by-side of the three releases
can give Reservoir, as well as curious
customers, instructive points of
comparison. The differences are subtle,
but distinct enough to compare-and
to find a favorite. One Maison de Cuivre
release may highlight the flavor of ripe
red grapes. Another may be more tannic
or present notes of baking spices and
