DEBATES : CORNBREAD AND BREADED BURGERS
Although Bean Barn (nee Britt's Grill) founders Romie and Zella
Mae Britt raised their children on soup beans, the siblings disagree to this day about how to serve them with cornbread.
"I don't know what the thing is about people crumbling
their cornbread in their beans," says daughter Geraldine Pierce.
"You know, I've got a husband who does that. And I still don't
really like them that way."
In a front-porch discussion on the subject, Geraldine's sister
Janie Melton takes issue immediately.
"Now I like it that way. It soaks up the juice. You get more
juice and beans at the same time - and the cornbread - and
the onions has got to go in there, too."
The sisters do agree on one thing, though. Their father knew
how to run a restaurant.

"Daddy always had an A grade on his food," remembers
Melton. "And Daddy would know when they come in the door
- he'd have their food sitting in their place because they eat the
same thing every day."
Like many cooks of her generation, Zella Mae Britt stretched
her hamburger meat with bread. Dan Walker says a customer
came in one day and asked what was on the menu. He initially
declined on the hamburger choice, saying ground meat was hard
on his stomach. Dan said his father Reagan told the customer,
"There's not enough meat in those hamburgers to hurt you."
"Yeah, they used to laugh at Mom, she could take five
pounds of hamburger meat and make 10 pounds out of it,"
Melton adds. "And somebody would say they got food poisoning on that hamburger, and Reagan'd say, 'Not that hamburger
you didn't. Not enough meat in it to make you have food
poisoning.'" -FS
