Greek Yogurt Parfait
with Fresh Berries
and Almonds
This homemade treat is low in sugar
and high in vitamin C, protein and fiber
INGREDIENTS
1 cup blueberries
1 cup raspberries
2 cups nonfat Greek yogurt
4 teaspoons honey
2 tablespoons almonds (about 24 to 28 nuts)
DIRECTIONS
1. Combine blueberries and raspberries in a small bowl.
2. Divide yogurt into ½-cup increments in 4 glasses. Stir 1 teaspoon
of honey into each portion of yogurt, blending well.
3. Add ½ cup of mixed berries and about 7 nuts to each parfait.
Makes 4 servings.
Nutritional information per serving: 164 calories; 3.8 g total fat;
14 g protein; 21 g carbohydrates; 0 mg cholesterol; 47 mg sodium;
3.6 g dietary fiber; 160 mg calcium.

Honey
This sweetener contains antioxidants
that can lower blood pressure, improve
cholesterol and reduce the risk of
heart disease. Consuming local honey
may also reduce seasonal allergies, as
local varieties contain the same pollen
as where you live, and eating it regularly
can desensitize your immune system
to the pollen and minimize symptoms.
Stevia
A plant extract, stevia has zero calories
and won't spike blood sugar, making it
a great alternative for people monitoring their blood sugar levels. If you're
looking for less sweetness, stevia is for
you: Some say the sugar alternative
has a bitter aftertaste.
Sucralose
Better known as Splenda, this zerocalorie artificial sweetener is known to
have little to no effect on blood sugar
levels. Just don't bake with it: At high
temperatures, sucralose breaks down
and can interact with other ingredients
to produce harmful compounds.
Monk Fruit
This small Chinese melon might not be
on your grocery list, but its sweet taste
and anti-inflammatory properties
make it the perfect sugar substitute.
Like other alternatives, monk fruit will
not cause a blood sugar spike.
