The Question
Long ago, serious bartenders resolved the “shaken or stirred?” conundrum. A drink shaken vigorously with ice cubes will indeed become cold, but in the shaking process shards of ice break off and disperse into the mixture. The resulting frothiness and texture can be pleasant at first, but it becomes vexing when your drink becomes watered down. Martinis should be all spirit, not 10 percent water. That's why stirring, with its extremely slight dilution from melted ice, is key. @
