A native of Catalonia, Chef Paco Pérez began his career in the fishing
village of Llançà, 100 miles north of Barcelona. There he learned
to create delicious dishes using local seafood, mixing in flavors that
reflected the region. “I was influenced by my environment, the Mediterranean Sea and beautiful mountains,” Pérez says. And the critics
took notice. His Miramar restaurant garnered two Michelin stars.
In 2008, he took the helm at Enoteca in Hotel Arts Barcelona,
where guests inspired even more creativity: “Sharing my cuisine
with international travelers in a luxury hotel helped me evolve.”
The evolution was swift. Enoteca earned its first Michelin star
in 2009 — just a year after Pérez first stepped into the kitchen —
and recently received its second star in the 2013 guide.
Guests can experience Pérez’s full range of flavors by trying the
eight-course degustation menu with the wine pairing and, in the
summer, enjoy the best of Catalonia by dining on the restaurant’s
outdoor terrace with sweeping views of the Mediterranean.
