Garbanzo NUTS PHOTOGRAPHY BY SUPERSTOCK; GETTY IMAGES; THINKSTOCK Makes six 1/3 -cup servings 160 calories per serving INGREDIENTS 2 15.5-oz. cans garbanzo beans, rinsed and patted dry 1 Tbsp. olive oil dash of chipotle pepper powder (use quantity desired) dash of salt (optional) DIRECTIONS 1. Heat oven to 350 degrees. 2. Line a jelly roll pan (cookie sheet with a rim) with aluminum foil or parchment paper. 3. Place garbanzo beans in a medium-sized bowl. Add olive oil and chipotle pepper or other herbs and combine well. 4. Place on baking pan and bake for two hours (monitor so they don't start to burn). 5. Turn off the heat and leave the garbanzo beans in the oven as they cool and become a crunchy "nut." (This usually takes a few hours. For best results, let them cool overnight.)
