Rather than ordering room service from the cocoon of my room, I ventured down to the ooh la la of the Paris resort. I wasn’t in the mood for French food, which of course didn’t matter because I had my choice of about a dozen different restaurants. I decided on Italian and made my way to La Provencal. It’s an Italian restaurant with a French name. At the door, the hostesses are dressed in what passes for “traditional” Country French garb in Vegas—ruffles, floral patterns, tight bodices… you get the picture. More interesting to me, given the “stealth issue” of our Outlook 2008 cover story, was the fact that both hostesses and at least one-third of the servers in this Italian-French eatery were of Hispanic descent. Not surprising. Hispanic workers fuel hospitality juggernauts like Las Vegas. While I do not have hard percentages on ethnic groups employed in the city, a good look around Vegas gives a pretty good idea. And it’s no different for other major meetings destinations like Orlando, Dallas, Los Angeles, Atlanta, and many others. Our Outlook 2008 sheds some light on what the U.S. Hispanic community means to the hospitality industry and how the firestorm surrounding illegal immigration stands to affect your meetings in 2008. Contributor Christopher Hosford looks at the critical issue that’s almost entirely off the radar for planners.
