Shimmering Rock Candy INGREDIENTS 1 cup confectioners' sugar; 3 3/4 cups white sugar; 1 1/2 cups light corn syrup; 1 cup water; 2 teaspoons cinnamon oil; 1 teaspoon red food coloring DIRECTIONS 1. Roll the edges of two 16-inch square pieces of heavy-duty aluminum foil. 2. Sprinkle the foil very generously with confectioners' sugar. 3. In a large heavy saucepan, combine the white sugar, corn syrup, and water. 4. Heat over medium-high heat, stirring constantly until sugar dissolves. Stop stirring, and boil until a candy thermometer reads 300 to 310 degrees. 5. Remove from heat. 6. Stir in the cinnamon oil and food coloring. Pour onto the prepared foil, and allow to cool and harden. Crack into pieces, and store in an airtight container. Source: allrecipes.com Old-Fashioned Divinity Candy INGREDIENTS 3 cups white sugar 3/4 cup light corn syrup 1 cup water 2 egg whites, stiffly beaten DIRECTIONS 1. Cook syrup, sugar and water to soft ball stage (when a small amount dropped into cold water forms a soft ball). 2. Pour half of the mixture over stiffly beaten egg whites. Stir. 3. Cook remaining sugar mixture to brittle stage (a small amount dropped into cold water immediately turns brittle). 4. Add to previous mixture and beat until candy will hold its shape. Beat again by hand to re-aerate it. Drop by spoonful onto waxed paper. Allow candy to harden as it cools. Store in refrigerator with waxed paper between layers.
