From his days as a youth in
the northeastern province of
Newfoundland to his college days
in the province of Manitoba and
his 25 years serving the Canadian
government in British Columbia,
Pascal has taken advantage of Canada's
ever-changing climate - playing
soccer in the warmer months and
snowboarding in the winter. Now that
he is living in one of Canada's warmer
regions, Pascal enjoys the additional
months he can participate in the area's

senior soccer leagues. "Of course, I'll
have to take time off from the team
to attend the next IAFP conference
in Oregon and an upcoming trip to
Southern France."
With the last of his four children
moving out of the house, Pascal will

have more time to enjoy some of his
interests. Will it be soccer, history
or traveling? Whichever it is, he will
pursue it with the same vigor that
he has pursued his career in food
science.

MOST MEMORABLE TRIP TO EUROPE? A trip to Paris with my
family two years ago definitely tops the list. As the children grow there are fewer
opportunities to travel together. We had a wonderful time visiting landmarks (and
not so well-known) historical sites, museums and eating snails.
WHAT IS YOUR FAVORITE FOOD?
I have travelled to Thailand often. I find Thai food delightful due to the combination
of visual appearance and complexity of flavors.
FOOD YOU WILL NEVER EAT? Mollusks are okay but I draw the line at insects.
WHAT IS YOUR MOST MEMORABLE IAFP MOMENT?
Every annual meeting provides the best forum for the exchange of scientific
and technical information with friends and colleagues in the food safety/
microbiology community.
COUNTRY YOU WOULD LIKE TO VISIT?
Turkey. There is plenty of historical stuff to look at there!

ancient history. "Our trips are always
a balance between the beaten and
the unbeaten tracks," explains Pascal.
Despite their differences in travel, the
Delaquises agree that life in British
Columbia has been good for them and
their four children. "It's also been a
great place to pursue my career," adds
Pascal, who worked in Canada's meat
industry before joining the country's
department of agriculture, where he
is focused on the safety of fresh fruits
and vegetables. "I feel very fortunate
to use my scientific knowledge to
impact the quality of the food supply
and the health of our citizens."
