Africa's population numbers form
a pyramidal shape, illustrating the
continent's large young and vulnerable
population. The shape for all
other regions has a narrow base that
broadens and eventually narrows
as age increases. Many regions
have a significant percentage of
their population in the vulnerable
population age 65 and above. While
the shapes for Europe and Northern
America illustrate a narrow base
with generally increasing percentages
until around age 60-64, other
regions show a broad base at age
0 to 4 that gradually reduces with
age. While Latin America and the
Caribbean have a larger population
than Northern America, the population
over 65 is smaller, thus targeting
food safety efforts toward the younger
population may be appropriate. Population
pyramids are also available
for individual countries, which can
be used to assess specific country
concerns. These are useful for food
safety professionals to consider
when preparing for a presentation in
a region outside of their homeland.
Senior citizens are a concern in
some regions, but younger populations
may warrant more focus
in others. The world population is
diverse and food safety professionals
must consider the population that
they are addressing to have the
greatest impact and to be credible
to the audience!
International food safety efforts
also require diverse viewpoints
because regional food and food
taboos vary. For 60 years, the International
Commission on Microbiological
Specifications for Foods
(ICMSF) has published internationally
relevant food safety management
information on a variety of topics.
In 2022, ICMSF's eight academic,
six government, and six industry
members from fourteen countries
reach consensus on useful food
safety approaches before publishing
books and papers. Meeting sites
vary around the globe and virtually
due to COVID travel restrictions.
The ICMSF invites regional food
safety experts to discuss regional
challenges and to review working
drafts relevant to their expertise.
Spanish, Portuguese, Chinese and
Japanese translations of ICMSF's
latest books, Microorganisms in
Foods 8: Use of Data for Assessing
Process Control and Product
Acceptance and Microorganisms in
Foods 7: Microbiological Testing in
Food Safety Management (second
edition) illustrate international interest
(4, 5). Native speaking technical
experts assist with translations to
ensure accuracy because regional
language differences can result in

misunderstanding. For example,
ICMSF's Latin American Subcommission
identified 29 terms that differed
from those used in the Spanish
translation, which was translated in
Spain (e.g., Table 2). ICMSF participates
in regional workshops not
only to share information, but also
gain insight into regional food safety
issues. Examples include ICMSF's
Latin American Sub-commission's
three-day webinar in April 2022
on " Diving Deeper into the ICMSF
Approach to Microbiological Food
Safety Management Now and in
the Future " and IAFP 2022's Premeeting
Workshop on " Microbiological
Sampling and Testing: ICMSF
Workshop for Risk Managers and
Food Business Operators. " These
activities may identify issues to address
in future work and help
ensure applicability of ICMSF's
efforts to enhance food safety
globally.
Skills acquired during a food
safety career are useful during
retirement. Record verification is
an essential element for credible
genealogical research and a flow
diagram of the genealogical proof
standard assists researchers in
reaching credible conclusions (6).
Public health issues emerge when
searching death records, such as
1,836 church records documenting
a cholera epidemic in the AustroHungarian
Empire (11). A Minnesota
death record identifies stomach
cancer as the cause of death of
the author's great-grandmother (8).
She immigrated to Minnesota from
Romania in 1924, after World War
I. Food was scarce during and after
the war. Was she eating food made
with moldy grain to survive?
This question illustrates the
need for diverse thinking about
food protection in an era of climate
change and war that contribute to
major disruption of the global food
supply chain. When food shortages
exist, the saying " when in doubt,
throw it out " is not useful. People
