" It's all about balance and trade-offs when
it comes to meat consumption. That can
mean more meatless meals, less meat used
in a recipe or trading out meat for proteinpacked
affordable ingredients such as beans, "
observes Rudisill, who has worked on dishes
like Cheesy Chicken & Bean Nuggets, and
Turkey and Grain Burgers. " Consumers have
received the message that they should eat
more plants so, combined with economic
drivers, it could be a win-win. "
Research shows that consumers are
increasingly drawn to plant-based offerings but
don't want to give up meat entirely.
