- often at double-digit rates - operators
have been looking for ways to amplify both

stretch the proverbial food dollar. " We want

cheese profiles and cooking methods to create
recipes like comfort-food mac-and-cheese made
with toasted cheddar cheese base. " Cheddar in
any type of savory application is very popular
right now, and we are noticing that people
are seeking out some of the sharper Italian
cheeses, " reports Cawley. Trending options in
today's market include Asiago, Alfredo, Basil
Pesto, Toasted Cheddar, Parmesan, Smoked
Gouda and Vegan Cheddar.
