For those I usually will charge a bit more, and sometimes per hour, just because they’re so much more labor intensive.” When pricing modeling chocolate sculptures, it is important to consider the scope of the entire order. At Tiney’s, the
pieces range from $700 to $3,000, depending on the scope and time it takes to complete a project. “Obviously we can’t charge 100% by the hour because some of these projects will take us three to four days, and on some occasions we’re working six to seven hours a day,” Rios says.
