BY TIMMY TRABON Developing a signature specialty is a major part of developing your brand. It should be a timeless item — one that encapsulates and represents the quality of your business. Not to mention, it should be absolutely delicious. Customer interest On many occasions, a bakery might independently conclude that one specific item is its specialty; on the contrary, customers might clearly favor another product on the menu. The dilemma lies in what exactly determines a specialty.
