the road, the less likely you are to damage your product or arrive late. Rush hour is a risky time for delivery. Traffic risks the quality of your product to longer exposure, wastes time and requires you to drive at a time of day when accidents peak. Higher delivery fees during rush hour can reduce the number of delivery requests during that time. This means less time you or your staff members will have to spend outside of the shop and less time your cake will be susceptible to the environment.

When scheduling deliveries, first ask clients when they would like the cake delivered. Next, ask when they plan to serve the cake. Unfortunately, not every customer realizes buttercream’s vulnerability to heat. If a client wants the cake to be delivered at the crack of dawn, find out if the event is actually scheduled that early or if the time was just an arbitrary request. Without inconveniencing your customer, try to strategically schedule the delivery within two hours of the event. That way, your cake will not be sitting in the summer heat for hours. Turn up the AC

Also, it’s important to know your limits. If you’re delivering cupcakes, know how many you can stack up, and don’t stack more, says Sara Fatell, owner of Grassroots Gourmet in Washington, DC. In addition, know how many cakes you can deliver in your area without rushing. Spreading yourself or your employees thin can compromise the safety of the trip.

Keep the product chilled for as long as possible. This means put on the Christmas sweater and turn up the AC in July. The longer you can keep your cakes at a low temperature, the better they will fare at the event. While a refrigerated van is ideal, blasting the air conditioning and using insulated containers and dry ice can often do the trick.
