Creative Decorating
At La Perla Tapatia in Chicago,
bakery manager Carlos Estrada wanted
to find a creative way to accentuate
their decorated tres leches cakes in a
distinctive manner, which would set
them apart from the competition.
His search proved fruitful, as he
discovered BakeMark could supply
them with decorative chocolate pieces
to adorn the tops of their cakes.
“We have all types of customers,
and we want to provide more different
types of decorations,” Estrada says.
“BakeMark helped us be successful.”
Panaderías across the country are
coming up with many different ways
to decorate traditional tres leches cakes
and gelatin cakes. The use of glazes
and fresh fruits like strawberries and
grapes is widespread, but increasingly panaderías are creating more
elaborate looks with chocolate and
nut toppings.

possibilities of combining flavors and
textures to create memorable desserts
are endless.
Chocolate with an ethnic twist

chocolate business, according to The
Food Channel.
More desserts and pastries are
being drizzled in chocolate, as exemplified by the popular chocolatedrizzled, upside-down cupcakes sold
at La Perla Tapatia.

Another trend in cakes is the
increasing use of nut butters like

almond, walnut and cashew. Nut

THE RISE OF DECADENT
DONUTS

Panaderías can expand their donut
offerings with flavors and toppings
that they may already be using, such
as coconut flakes, mango fillings and
dulce de leche.
La Victoria in Stockton, CA,
uses coconut flakes on one variety
of its glazed donuts to add appeal for
customers looking for different flavors.
Bakery shoppers are increasingly
on the lookout for new twists on traditional bakery products. Mango cream
donuts are one example of a donut
that is gaining in popularity because
of this trend.
