start to peak during the spring and
early summer months, and Mother’s

of the top sales weeks overall for cakes.
One creative way that more
panaderías are catering to the changing
lifestyles of today’s consumer is with
more single-serve desserts. Whether
bakeries call them cake balls or cake
pops, small pieces of cake covered in
icing and decorations are selling like
crazy at retailers across the country.

Cinco de Mayo, or the fifth of
May, commemorates the Mexican
army’s 1862 victory over France at the
Battle of Puebla during the FrancoMexican War (1861-1867). A relatively minor holiday in Mexico, Cinco
de Mayo has evolved into a major US
celebration of Mexican culture and
heritage, particularly in areas with
large Hispanic populations.
Nearly half of the nation’s
Hispanics live in 10 major metro areas.
