While the entire layout should be well thought-out
and designed, Hanna wanted to send a message with
the very front of Sucré. The first thing you see when
you walk into the flagship store is the gelato. “Part
of that mentality was simply because we’re in a very
high foot traffic area in a very tourist friendly part of
town, it immediately says what we are,” Hanna says.
“With the ice cream right up front, it draws them in
Sucre puts vibrant colors in the middle and then builds outward.

Hustle and flow
Getting customers exposed to all your products while
making their purchase(s) as easy and convenient as
possible creates a problem. Some customers know
exactly what they want, where they need to go within
the bakery to get it and get out. Others want to shop,
and sometimes customers know what they want,
but also want to check out the rest of the store. For
the bakery, catering to all of this guarantees the best
possible chance of raising ticket totals to their full
potential, but it’s difficult.
Sweetish Hill Bakery & Cafe does a good breakfast
business with pastries and coffee as well as traditional
bacon and egg breakfasts. It also does good lunch
business with salads, soups and sandwiches, and it’s
still a traditional bakery with cakes, cookies and other
traditional sweet goods. “Trying to get flow through,
particularly when you’re doing all of these different
things, is always a consideration. It’s really hard to
figure out,” Murphy says.
A bakery must observe its customers and the patterns
throughout the day. Then set up to accommodate
those patterns. “People are confused when they
come in. Where do they go if they just want cookies,
or how do they order lunch? So,
