Sun Street Breads
Solveig Tofte and her husband, Martin Ouimet, opened Sun Street Breads in Minneapolis in 2011,
meeting with immediate national acclaim. Chef/TV personality Andrew Zimmern of the Travel Channel lists Sun Street as one of his 15 favorite bakeries in America. "Solveig Tofte isn't just good at
baking; she's one of America's best bakers," Zimmern says.
Breakfast is a specialty at Sun Street Breads,
and the menu features made-to-order biscuit
sandwiches, biscuits and gravy and much
more. An assortment of sides includes housemade granola, potatoes gordas (fried mashed
potato balls), and seasonal fresh fruit. The bakery cafe offers a daily assortment of fresh baked
pastries such as raspberry cream scones,
downtowner cinnamon rolls, kolaches and bacon-cheddar biscuits.

"We're doing a lot more breakfast savory pastries," Tofte says of current trends. Examples include
bacon-cheddar croissants and their own version of focaccia "pockets" filled with scrambled eggs,
Swiss chard and goat cheese. They also make unique combinations of biscuit sandwiches like sausage and currants. The ingredients inside depend on what's fresh and in season. "We're a bakery
cafe so we do tons of biscuit sandwiches," Tofte adds. "They are perfect little grab-and-go foods
that happen to be healthier."
