Chocolate), showed bakers how
simple it is to temper chocolate and
use it to create fantastic and eyecatching creations. "The country
is gradually changing from a milk
chocolate country to a semi-sweet
and bittersweet county, though the
Midwest is still a milk chocolate
holdout," says Gonzalez. Using
tempered chocolate, chocolate
clay and reception sticks Gonzalez
demonstrated how to make a woven
chocolate basket.
Elizabeth Riggs from Bakery
Crafts showed bakers how to
get more from their airbrushing
machines. Using stencils, lace and
see-through fabrics she created many
cake decorations that look as if you
spent a lot of time when it actually
takes just seconds. Go to your local
fabric store and pick out any lace or
see-through fabric, lay it on top of
your buttercream frosted cake and go
to town. You can reuse all the fabrics
too if you remember to wash, rinse
and sanitize them after each use.
To create an embossed look on
top of your cake, place the lace on
top of the buttercream and spread
a thinned down buttercream on
top. Pull the lace off carefully and
you'll get a 3D effect.
Riggs also offered a few
maintenance tips to keep your
airbrush machine working at the best
level. Protect your needle by using a
piece of the plastic hose just as you
would a pen cap; this will keep the
needle from getting bent. If your
needle does get bent, slide it between
two pennies (the copper is a soft
metal) and it should straighten out.
Jackie Fiedler, a Manufacturing
Sales Representative from the Puratos
Corporation, showed how easy it
can be to create truffle enrobed cakes
using Puratos chocolate truffle. To
create a marbled look on top of your
cake, coat it with chocolate truffle
then sprinkle a little while chocolate
or hazelnut truffle on top. Then its
time to get your secret weapon: a
hair dryer. A quick blast with the hair
dryer on high gives you a marbled
look that's unique each time.
