BREAD & BAKING Sweet Breads As a bakery category, bread is a bestseller. It accounts for nearly one-third of all bakery sales year after year. And one of the hottest segments within the bread category is sweet breads—pan dulce. Within the Hispanic culture, sweet breads are especially popular. “Traditionally, after eating, Hispanic people like to have something sweet,” says Julie Moreno of El Fogón in Bakersfield, CA. “Something sweet always follows a meal.” TYPES OF SWEET BREADS Arguably, the most popular type of Hispanic sweet bread is the concha—one of the most traditional breads of the Mexican bakery. Concha dough is rich in sugars, shortening and eggs, and the pasta topping is a sweet paste that comes in many different colors such as chocolate, pink, white and yellow. Fruit-filled empanadas are a close second in sweet bread popularity. Empanadas are made out of a lightly sweetened dough, and are usually shaped into a triangle by hand. At Panadería La Mexicana in Oxnard, CA, they offer empanadas with the traditional fruit fillings, such as strawberry and pineapple; and they also offer pumpkin, which sells year-round—not just in the fall and winter seasons. Pan fino is another Mexican bakery staple. The sugary, soft dough, which has a distinctly cinnamon flavor, is often shaped by hand; therefore, it comes in a wide array of figures and shapes. Cuernos or cuernitos are horn-shaped pan fino. At Porto’s Bakery & Café in Downey, CA, they make a sweet croissant out of Danish dough; and while not pan fino, it takes on the same horn shape. Other popular pan fino shapes are elotes, which have an elongated oval shape, and panaderos, which are circles. Niños envueltos are sweet jelly rolls made with a sugary egg batter and a fruit filling—usually strawberry or raspberry. The dough and filling are rolled up, taking the form of a wrapped child, which is where the name niño comes from— they are called “babies” at Panadería La Mexicana for the same reason. Finally, the rolls are topped with the same fruit filling and sprinkled with coconut. La Estrella Bakery in Fresno, CA and Tropicana Bakery & Cuban Café in Downey, CA both enjoy sales from orejas, which typically look like ears or palm leaves, and are made of 34 MARCH 11 | PANADERIA
