PROFILES La Estrella Bakery There is a focus on family at La Estrella Bakery in Fresno, CA. And husband and wife owners Salvador and Elza Surev could think of no better way to serve their families of customers than to open up a newer, bigger bakery last year. Originally from Michoacan, Mexico, where Salvador’s family had a bakery, the Surev’s decided to open up shop in Fresno 12 years ago after hearing from a friend that their bread was different than anything else available in the area. Their bakery occupied its first building for 11 years until it simply got too small. “We needed to open a new store because a lot of people were coming to buy a lot of bread,” Salvador says. “I needed a bigger space to give better service to our customers.” As luck would have it, there was room to build right next door. Today, you can see the new building right next to the old building, which is still standing and used for the bakery’s storage. “That building is for memories,” Elza says. “The new building is for our customers. Now it’s not just a bakery; there is a restaurant and a coffee shop and plenty of room for customers to sit.” In addition to the new seating area and foodservice options, the new bakery also features several new display cases with a unique feature— they can be filled from the back to the front. The bakers can load entire sheet pans in from the back of the store, without having to go around to the front and disrupt customers. “It’s more clean, more healthy and more convenient,” Elza says.
