FOODSERVICE INNOVATIONS Box Lunches: Leveraging Gluten- and Allergen-Free Options In today’s nutrition-focused society, box lunches are trending upward in popularity among business people, college students and school children alike. Many people like to keep their portion sizes in check and to know exactly what they are consuming. For most people, that knowledge is a luxury. But for some, it can be the difference between life and death. There are between 100 and 150 food allergy deaths each year in the United States, and food allergy among the population is growing, according to Ellen Karlin, a presenter at this year’s National Restaurant Association Show. “Food allergy affects 1 in 17 young children, 1 in 20 children, and 1 in 25 adults,” Karlin says. In addition, “Celiac disease affects 1 in 133 people, and that number is also rising. And millions more suffer from gluten sensitivity.” Food allergy is an abnormal response to food protein. The reaction can range from a mild rash to fatal anaphylaxis. Celiac disease is a genetic disorder that also involves an abnormal response. In Celiac, the immune system responds abnormally to gluten and it can lead to serious medical disorders. And in gluten sensitivity, which afflicts millions, symptoms also can be severe. Currently, the only treatment for each of these conditions is strict avoidance. As a retail bakery, this presents an opportunity. By offering glutenand allergen-free box lunch options, you can position your business as a go-to destination among the many people in that segment of the population—who will, in turn, bring along all of their friends and family members. Achieving Gluten and Allergen Free in Your Bakery Providing gluten- and allergenfree foods is not as simple as tweaking formulas, although you will need to do that, too.
