Topsy-Turvy Made Simple
When it comes to constructing a topsy-turvy cake, many people can be easily intimidated. But fear not! JodiLee Knopps at DecoPac has some simple steps that will take the fear out of topsy-turvy cake construction.

Step 1
Start carving the first tier from a three-layer cake. Be sure the cake is cold when scoring for best ease-of-use.
Step 2
Create an “inner wall” on that tier, and cover with buttercream; then place and smooth the fondant.
Step 3
3. Cut four dowels level with the top flat edge of the tier and place.
Step 4
Then insert a 6-inch plate with the legs in the opposite spaces of the dowels, so the legs are placed into the cake, not the dowels.
Step 5
Place the next tier, which sits on a board the size of its base, at a different angle than the tier below. Be sure to place it snugly into the inner wall.
Step 6
Use fondant Deco Sheets to embellish a topsy-turvy cake for any occasion.
