AIB adds BISSC
course date
Equipment manufacturers have another opportunity to comply with BISSC self-certification before the Jan. 1, 2007, deadline. The
Certified Equipment Design course, a coop-
erative effort of BISSC, the Baking Industry
Sanitation Standards Committee; BEMA,
the baking industry suppliers association;
and AIB, will be offered Nov. 7-8 at AIB,
Manhattan, KS. The course will cover purpose, history, definitions and zone requirements; applying the standard to equipment

design and using installation guidelines.
New mandates state that equipment
manufacturers who wish to display the
BISSC label must have equipment inspected
by an individual who has completed AIB's
Certified Equipment Design course. The
course is the only approved training for the
interpretation and application of the ANSI/
BISSC/Z50.2 standard. Equipment may also
be third-party certified, available through
AIB and other organizations.

During October, Panera Bread will offer
pink ribbon-shaped bagels in all of its bakery cafes for National Breast Cancer Awareness month. The pink bagel features cherry
chips and real bits of Bing cherries and cranberries. The bagel was created in 2001 by Sue
Stees, one of Panera Bread's first franchisees
and a breast cancer survivor.
"Panera Bread is committed to serving the members of the local community,
many of whom have had their lives touched
by breast cancer," said Ron Shaich, c.e.o.,
Panera Bread, Richmond Heights, MO. "We
are honored to support the Susan G. Komen Foundation and various organizations
fighting to find a cure for breast cancer."
The company will donate a portion of
the proceeds from each pink ribbon bagel
sold to a variety of breast cancer causes, including the Susan G. Komen Breast Cancer
Foundation and Y-ME National Breast Cancer Organization.
