'Good', 'bad' carb definitions
misleading, says scientist
After examining peer-reviewed research on carbohydrate consumption, University of Virginia professor Glenn Gaesser, Ph.D., determined that dividing carbohydrates into good and bad categories is
misleading and cannot be used as a measurement to prevent overweight and obesity.
The report, published in the October issue of the Journal of the
American Dietetic Association, also found that consuming high levels
of high-glycemic foods is not associated with higher body weights.
In fact, several US studies revealed that such diets were linked to
better weight control.
Public discussion of carbohydrates often labels as "bad" those
with higher glycemic index (GI) ratings. This index measures how
quickly certain foods release carbohydrates into the body, which
then raise the blood glucose levels.
Glycemic response, however, differs among individuals. A study
released earlier this year by researchers at the Boston, MA-based Jean
Mayer USDA Human Nutrition Research Center on Aging at Tufts
University used a simple food test with white bread to measure GI responses. White bread's GI is usually pegged at 70, but the researchers
found that the GI responses of individuals ranged from 44 to 132.

WFC to bring wheat field to NYC
During the International Baking Industry Expo in October, the
Wheat Foods Council (WFC) announced it would bring a 1-acre
field of fully mature wheat to Manhattan. Slated for September 2008,
the wheat field will be brought on pallets to Lincoln Center on New
York's West Side. Educational programming will be conducted onsite for three days, including milling, baking and eating.
