Open frame reduces maintenance, sanitation worries
Sanitation and maintenance were at the forefront of design plans when AMF
Bakery Systems produced its Open Frame Mixer (OFM).
Introduced last year, the horizontal mixers feature fewer steel panels and
provide more open areas to simplify cleaning. The open-frame design features
a stainless-steel tubing frame to house the bowl and the drive. It's all about
providing access for cleaning and maintenance.
"Sanitation is certainly the driving force behind the frame design, although
we have also made the bowl stronger and the cooling more efficient in the
new OFM series, said Bruce Campbell, vice-president of AMF "The frame

design is also compatible with all the various Trough Hoist systems, both manual and fully automatic.
"
The OFM's bowl is designed for maximum strength and minimum deflection in the cooling jacket for leak-free
operation, Mr. Campbell said. It offers a triple roller bar design that can handle a wide range of dough types
including bread, buns, rolls, flour tortillas, English muffins and pizzas.
The mixer includes a conventional drive system and bowl tilt that does not need hydraulics.
"The result is an efficient, safe, stable, easy-to-operate and clean mixer, Mr. Campbell said. "This means that

bakeries do not have to perform sanitation on the hydraulic components and, in fact, should not have to open the
enclosure unless they are doing maintenance procedures, he added.

A conventional gear motor is mounted low for a stable center of gravity, and a robust timing belt drive aims for
long life and reduced shock load on the gear motor.

Single-strand braided breads

Ultra-high shear mixers

A new toolkit for the MultiTwist from
Fritsch USA can make single-strand
braids with a handmade look. Such
braids formed from lye (pretzel) or
bread roll dough are among the most labor-intensive and complicated products in the baking business. The module twists braids
with the finesse of a baker's hands. Similar to hand production,
the starting point is a cylindrical dough string about 450 mm
long. Gripper arms twist one braid after the other from dough
pieces weighing approximately 90 to 110 g. The braider's capacity
is about 1,000 pieces per hour.

Single-, double-sigma mixers
