For a variety of products such as
éclair dough, pâte a chou and marzipan, the Vertical Planetary Mixer
from Tonelli Group is a multifunctional mixing, cooking and cooling system with a jacketed bowl for
saturated steam and chilled water
circulation and a hard vacuum to speed up the cooling process or concentrate the product. This system aerates the mixture with purified air
and uses new cooling technologies - CO2, liquid nitrogen and glycol.
Production rates range from 500 to 6,600 lb per hour, depending on the
product, and liquid and semi-liquid products can be transferred from
the mixing bowl through a Pneumatic Piston Pump TSB model.
