learn how to make beautiful numbers,
letters, stars, spirals, butterflies, and
free-form abstract designs with Isomalt
Sugar. We will teach how to properly
work with Isomalt, to add it color, to cast,
to highlight and shimmer, to assemble
and decorate - from start to finish! The
course will help you stay on the cutting
edge of trendy dessert design. If you are
looking to add some special flair to your
cake designs, you will learn how to create
free-form show-stopping decorations that
will be profitable and fun! Attendees will
work with ingredients and tools, as they

airbrush and add profit to your bottom
line. Students will learn how to operate
and care for an airbrush, which exercises
to practice to gain better control, how to
cut and use custom stencils, and how to
create special effects on their cakes. The
class will be a combination of hands-on

class feeling more comfortable with
an airbrush and ready to use the many
designs and techniques taught in class.

simple gravity defying cake using simple

Cookie Decorating 101 - Introduction to
Icing & Decorating Techniques

make beautiful, professionally decorated
cookies! We affectionately call it " edible
art. " You will experience hands-on how to
make the correct " densities/thickness " of
icing to both outline and " fill " or " flood "
the cookie. You will also learn the " wet on
wet " technique. Decorator bags and tips
as well as squeeze bottles will be used.
Once you have mastered the decorated
cookie, you will see how these works of
art can be added to your decorated cakes
and bakery case. I will pack this class full
of my 35+ years of cookie decorating
knowledge - things that I learned the
hard way - and will keep you entertained
while doing it. (No, I don't juggle or
sing). You will decorate and take home 6
beautiful cookies and be able to say " Yes, I
made these! "

Paints, we will paint a flamingo, a palm
leaf, and a monstera leaf, which will not

on fondant disks, we will also cover the
basics of design, blending, using stencils,
freehand painting and mixing colors.
