In this session, attendees will explore the
science behind plant-based baking and
discover the best ingredients to achieve
ideal form and function while replacing
traditional ingredients such as egg, honey,
butter and cream, among others with plantbased,
vegan-friendly alternatives. The
demonstration will also equip attendees
with proven techniques to ensure proper
hydration, resting, particle size, foaming,
emulsification, ingredient preparation,
Maillard browning, leavening and cell
structure development in baking. Discussion
topics will focus on how to achieve flavor,
texture and nutritional goals (including
protein and fiber claims) to make the most
out of plant-based baking. The ingredient
focus will be on gluten-free ancient grains
(amaranth, buckwheat, chia, millet, oat,
quinoa, sorghum, teff and wild rice) and
pulses (chickpea and lentil).

creates a detailed French bulldog 3D cake
in just 45 minutes without any carving, cake
wastage or internal supports. In this fun,
interactive session, Molly will show how she
uses her innovative 3D baking mould system,
Molly's Creature Creator, to cover the cake in
fondant, create the limbs, facial features and
realistic wrinkles, finished off with airbrushed
detailing for the perfect illusion cake.
Molly will also share tips and stories from
her 12 years in the industry as a consumer,
professional cake artist, brand ambassador
and product developer/distributor. She is
happy to take questions from the audience.

since the first re-purposed desktop color
page printers were filled with edible ink!
One of the most important has been the
opening of new, FDA-inspected facilities for
ink manufacturing and filling, cGMP filling
equipment that is for the very first time
food-safe. This includes a new NSF approval
for edible ink printers, never before available,
that pass that organization's rigorous safety
testing. You wouldn't put a stainless steel
table into a commercial kitchen without the
NSF approval logo. Why would you take

missing such an important safety approval?
