they want to order cakes like they see on TV,” she says. Freeman utilized modeling chocolate in much of her detail work, which proved to be challenging in the heat of competition, especially with the sunlight beaming down through the atrium of West Des Moines’ Jordan Creek mall. But overall, Freeman says, modeling chocolate is a medium that holds well for pieces that have a lot of shape and detail to them. While the decorators had the option to create the same cakes and theme as they did for the regional qualifiers, some chose to take a chance on coming up with something totally
new. This paid off for third-place winner, Heather Hansen of Omaha, NE, who created her designs around the nursery rhyme “What Are Little Girls Made Of?” She created a snakecovered cupcake cake, and the “snails and puppy dog tails” were made up from the sheet cake. The cookies and tiered cakes created the “sugar and spice” of what girls are made of. The 2011 Cake Designer Challenge marks six years for this competition. And every year, the bar is raised a little higher. “Every year, the talent gets better and better,” says Tony Byington, Hy-Vee’s assistant vice president of bakery operations.
“And every time the talent gets better, everyone else has to step up their game, too.” Byington has seen an evolution of cake design, thanks in part to the popularity of cakes on TV. “All of the cake shows and competitions are giving this career all kinds of exposure,” he says. “And the talent that works at Hy-Vee has stepped up because of that, and it’s brought a whole new life to cake decorating—a whole new variety for customers to choose from. It’s not just a plain cake with flowers on it anymore; you tell us what you want, and we create it.”
