deli dips/spreads/toppings at 7.6% and sushi at 5.3%. The remaining categories accounted for 16.1% of dollar share. Deli dips/spreads/ toppings gained 0.4 percentage point of dollar share in the 52 weeks ending January 29, 2011, primarily at the expense of deli prepared chicken. Dollar share for sushi, deli entrées and deli sandwiches grew this period, while dollar share for deli salads, pizza, deli soups, deli desserts, deli appetizers and deli breakfast foods declined. Deli prepared foods in the South region had the highest contribution to deli department sales at 58.7% for the 52 weeks ending January 29, 2011,

up 0.6 percentage points compared to the previous year. The East region posted the greatest increase in contribution, up 1.4 percentage points to 40.2% contribution. Deli prepared foods’ average dollar sales grew at a faster rate than the deli department as a whole in the Central (7.6% versus 6.1%), East (6.9% versus 3.3%) and South (7.8% versus 6.7%) regions. While deli prepared foods’ average dollar sales grew 4.5% in the West, deli department average dollar sales in this region were up 4.7% compared to a year ago.
