Specialty Cheese Spotlight
Cheese is a popular choice for shoppers seeking out more snacks, gourmet sandwiches and pizzas.
by John Unrein The United States is the tenthstrongest cheese consumer in the world, at 32.8 pounds per capita annually. With many consumers planning snacks as part of their daily eating habits, cheese is a popular choice in that niche. In fact, cheese is the most often-consumed deli product in 2010, according to new research from the International DairyDeli-Bakery Association. Sales of sliced, shredded, and crumbled cheese are getting a boost from consumers hunting for convenience. And sales of specialty cheeses, such as Feta, Fresh Mozzarella, Sharp Cheddar, Queso Fresco, and Pecorino
Romano, are growing rapidly. Joining wines, coffees, and chocolate as a gourmet product, small-batch, artisanal, locally produced and specialty cheese also carries a “better-for-you” halo that appeals to health-conscious consumers. Supermarket prepared foods are a rapidly growing segment as consumers continue to seek out affordable, healthy and convenient meals. Whether it’s ready-to-eat or take-and-bake, cheese adds instant appeal to nearly any item. The possibilities are endless— comfort food, healthy salads and even breakfast. Cheese can play a role in a variety of ways, and savvy retailers continue to expand their offerings, according to the Wisconsin Milk Marketing Board. Tim Tesch, a research and development chef at Lund Food Holdings, Inc., says his company sees strong growth opportunity in prepared foods that include specialty cheese. “We have had some of our greatest success with dishes including cheese such as our Signature Dijon Parmesan Chicken Breast and Asiago & Sage Potato Gratin,” he notes. “We are also developing a new line of pizzas that use specialty cheeses like Smoked Gouda, Goat Cheese and Cheese Curds.” Tesch sees three primary ways to use specialty cheese in prepared foods: • Garnish—Top a casserole with Aged Cheddar or Parmesan • Main ingredient—Make cheese the star in side dishes like scalloped potatoes • Sub ingredient—Enhance quiches with Wisconsin Swiss or Fresh Mozzarella The Wisconsin Milk Marketing Board, a nonprofit promotion group funded by the state’s dairy farmers, carefully monitors cheese trends
