by John Unrein InStore Buyer magazine recognizes Schnuck Markets as its 2011 Instore Bakery Operator of the Year for innovations in artisan bread, cake decorating and signature desserts and sweet baked goods for everyday occasions. Included among the numerous innovations at Schnucks is an artisan bread program at several stores that involves the daily production of 14 types of artisan breads. Featured varieties include Sesame Semolina Oval, Kalamata Olive & Rosemary Square, and Cranberry Walnut Round. Consumers can choose their favorites sizes and flavors. Unlike other supermarkets that sell pre-fried donuts, Schnucks produces its own raw donuts at its own bakery plant, and donuts are shipped frozen into the stores where they are prepared fresh daily. Shoppers can enjoy the freshest and most flavorful tasting large-sized donuts around, which is why Schnucks bills its donut program as “Bigger, Fresher, Better” than the competition. Capitalizing on seasonal events, Schnucks sells paczki or the few weeks leading through Fat Tuesday before Lent, typically the top week for donut sales in the country. Schnucks offers filled paczki in special four-packs (lemon, raspberry or custard) and

Dairy, Deli and Bakery Association’s 16th annual Cake Decorating Challenge, she had no idea she’d be flying back with the first place trophy. As a finalist, Schweiss estimates she decorated more than 30 cakes during the three-day competition. “When they announced me as the winner, I cried and was truly surprised and honored,” Schweiss said. “I dedicated my win to my father and mother. My dad taught me my work ethic, and my mom taught me everything I know about cake decorating.” Founded in St. Louis in 1939, Schnuck Markets, Inc. operates 105 stores and 101 instore pharmacies in Missouri, Illinois, Indiana, Wisconsin, Iowa, Tennessee and Mississippi.

Gooey Butter Cake is a type of cake traditionally made in St. Louis with a bottom layer of buttery yellow cake and a top layer of either egg and cream cheese, or butter and sugar. Gooey Butter Cake was invented in the 1930s in St. Louis when a bakery accidentally added too much sugar and butter, creating a gooey filling. The St. Louis Convention & Visitors Commission calls it “one of St. Louis’ popular, quirky foods.” Cake decorating is another special badge of honor at Schnucks.
