As Season 2 of the Busy Bakery concludes, Dawn Foods walks you through the top 10 trends happening in the world of sweet baked goods, according to the Dawn 360 study. Three of the top trends happening inside the bakery are comfort foods, chocolate and portion control. You can also find inspiration in other areas within the supermarket from super fruits like pomegranate and acai, as well as healthful grains like flaxseed and quinoa, to create a healthy profile in your bakery. And unique flavor profiles can come from other sources you might not imagine, like tea flavors and herbs and spices. The most innovative bakers are taking inspiration from flavors that aren’t strangers to the bakery, such as tropical fruits, citrus fruits and liqueurs, but they are taking them a step further by looking to new and unique varieties to dial up their flavor profiles. To truly make your bakery a destination, it’s important to keep up with trends both inside the bakery and throughout the supermarket. “These ideas create new flavor sensations in the bakery,” says Chip Potter, Vice President of Marketing for Dawn. “Some of these flavors are in the bakery today, and others might be there very soon.”

Top 10 Bakery Trends
1. Comfort Foods. Flavors like chocolate, red velvet and carrot evoke warm memories of childhood and have become one of the biggest trends in the bakery. 2. Chocolate. You can’t escape chocolate in the bakery. From chocolate cakes to brownies and across single serve items, chocolate is a huge trend and you have to embrace it. 3. Portion Control.
