Fast-food chains and casual-dining restaurants like Olive Garden were bursting on the scene at a fast and furious pace, prompting Balzer and his team of research analysts to wonder if someday consumers would not bother to cook at home ever again. That was then, and this is now. Supermarkets, of course, survived and prospered through innovation and reinvention. The instore bakery and deli evolved, as well, to the point where consumers today can find everything they need to eat at the supermarket and not have to cook at home. Balzer, a speaker at the recent FMI 2012 Food Retail Show, shared the latest findings from NPD’s Eating Patterns in America research and spoke about where trends are headed today. “Seventy-two percent of all meals now are obtained from home,” he says. “We’ve been moving back home for a decade.” If this comes as any surprise, consider this fact: “The easiest way for consumers to control their food budget,” Balzer says, “is to use restaurants less.” This month’s cover story takes an in-depth look at key trends affecting the future of the instore bakery and deli business, and what consumers are really eating for breakfast, lunch and dinner.
