Breads on the Rise
The breads category, the second largest category in the bakery, remained a stable contributor to instore bakery dollar sales in the 52 weeks ending June 30, 2012. Breads made up 18.8% of the instore bakery department, a 0.4 percentage point decrease from the previous year. Included in the breads category are crusty/hot hearth breads, artisan, sandwich breads, flatbreads and other. Nationally, breads averaged sales of $1,995 per store per week, an increase of 1.1% from the previous year. The highest sales for the breads category occurred the week of Dec. 22, 2011, with $2,620 per store, an increase of 4.4% from the previous year. This week is typically the highest sales week for breads, as it captures sales for the Christmas holiday. Breads had other strong sales weeks coinciding with holidays: $2,331 per store for Thanksgiving, an increase of 0.7% from the previous year, and $2,379 per store for New Year’s, a decrease of 1.8%. The lowest sales for the breads category occurred the week of June 30, 2012, with average dollar sales of $1,808 per store. All US regions except the Central region grew average weekly sales in the breads category compared to the previous year. The East region captured the highest average sales in the category with $2,963 per store per week, significantly outperforming the national average of $1,995 per store per week. The bread category in the West region had the highest contribution to bakery department sales at 20% and average sales of $2,110 per store per week, also above the national average. The East region had the second highest contribution with 19.9% of bakery dollar sales. Within the breads category, artisan and crusty/hot hearth breads accounted for 72.1% of category sales nationally in the latest 52 weeks ending June 30, 2012. Crusty/hot hearth breads, with 38.3% of the category share, was the only bread variety to decrease average weekly dollar sales
