Cakes Dollar Contribution to Department Sales by Region
PREVIOUS YEAR
Cakes contributed 29.1 percent to bakery
department dollar sales during the 52 weeks
ending November 28, 2015. During this time,
cakes averaged $3,474 per store per week, an
increase of 5.4 percent versus the prior year.
Decorated cakes, cupcakes, and dessert
cakes were the top-sellers during this period.
Both cupcakes and dessert cakes increased
dollar sales by roughly 6 percent compared
to the previous year, while decorated cake
sales remained steady.
The cakes category posted the largest
contribution to bakery sales in the South
region, at 32.5 percent. The South also had
the highest average sales of the four US
regions, at $3,535, up 4.3 percent compared
to the previous year. All US regions
increased cake sales over the prior year,
with the largest increase occuring in the
West region (up 8 percent).

the week ending May 16, 2015, at $4,669 per
store, followed by the week of the Christmas
holiday (the week ending December 27,
2014) at $4,280 per store.
