Going Green
When it comes to matters of energy efficiency and reduced waste, we
may not all be as impassioned or convicted as Leonardo DiCaprio was
during his Oscars speech last month. The picture painted by the actor
was one of corporate pollution and political greed, resulting in nodding
approvals or shakes of the head, depending on your views.
We don't have to get into politics or talks about climate change to
appreciate what upping the energy efficiency or reducing the waste
of an instore operation or bakery or centralized kitchen can do for a
company's bottom line and reputation.
"Saving energy is regularly a topic of conversation with our customers,"
says Laura Barrentine, marketing manager for Baxter Manufacturing.
"The level of focus seems to vary by customer, but ultimately energy
efficiency and energy-saving features can help the owner improve his
or her bottom line, so it's very important."
Our cover story features five (plus some) relatively new pieces of
equipment or systems that can help a company go green - be that a
renewed focus on being better for the planet or better for your bottom
line. Most likely, it's a little bit of both. From Baxter's claim of earning
the first Energy Star certification for rack ovens to AutoFry's time- and
money-saving in-bowl oil filtration system, this equipment can help
production facilities boost efficiency and profit.
In Commissary Insider, we look at the reduction of food waste and how
that can help centralized kitchens save large amounts of time and labor
as well as improving food safety, as shown by Champion Industries'
Food Waste Reduction System and its National Restaurant Association
Kitchen Innovations Award.
