The importance of ovens
in artisan baking
As obvious as it seems,
one of the most
important steps in
producing artisan breads
at scale is what oven you
choose. Deck or rack?
What accessories, if
any? Oven experts from
Revent, Inc. and Baxter
Manufacturing weigh in
with some thoughts.
Keep the quality
When expanding to larger production baking,
it's vital to uphold the integrity of the finished
product and the baking process. Consumers
want consistency in the quality of the breads
every time they purchase them at their
favorite store. "That's why we assist our clients
by keeping the art and science in the baking
process and providing a means to expand
production by utilizing our product lines," says
Laura Barrentine with Baxter Manufacturing.
"The client is operating at maximum efficiency
while producing bread products which have all
the quality of artisan breads time after time."
Expect more
Daniel Lago, CEO of Revent Inc., says the
biggest difference in artisan baking is the need
for a better oven. "You can choose between
going all the way and using a deck oven for
baking, but there are also a lot of artisan
products you can bake in a good rack oven,"
he says. "If you have the right air flow and
the right control of the bake in a rack oven,
you can get a good bake on products that 95
percent of American customers would think
are artisan. The biggest difference with our
rack ovens is that they're more consistent
and they're designed for scratch baking and
heavy-duty production."
That said, deck ovens are absolutely necessary
for some producers, especially when baking
thick-crusted, bigger, more rustic loaves. Baxter's
OV450 deck ovens use a glazed stone baking
surface for precise heat transfer to the product.
This allows even baking and crust formation. The
oven also comes in two widths to accommodate
production needs and kitchen space.
Don't over-invest ...
Make your oven work
While the oven is important, Lago says many
bakers and retailers sometimes fall into the
trap of spending too much money. It can be
a misue of precious resources."Sometimes
they feel they have to use a certain type of
oven, mainly deck ovens, to create artisan
products," he says. "It's a big commitment. If
you buy a rack oven, it's a lot easier to install,
it's a lot more flexible. And deck ovens take up
a lot of space."
Revent's Rotosole is an add-on for rack ovens
that uses aluminum soles with a special cloth
holder for the dough. The soles are preheated
by the air in the oven while the cloth holder
allows proper heat transfer, like that you'd get
with a deck oven. "The soles retain a lot of heat
and help produce a really good bake," Lago
says. "You still have the airflow and some of the
flexibility of the rack oven, but heat transfer like
a deck oven."
And like every artisan producer trying to reach a larger audience,
the same question keeps presenting itself. How do you scale without
compromise? Robertson says it's all about taking cues from both sides
of the spectrum.
"Everybody loves the little bakery out in the countryside," he says. "But
then you scale it and you might lose what you had. The commonsense
solution is that you do both."
REVENT, BAXTER, LA FARM
says. "They've figured it out. We're trying to push everything forward.
I'm super excited to be working with Chris Bianco and other chefs in
Los Angeles. We make an egg sandwich. So we ask, how do we make
a better bun? At lunch, we serve focaccia, and we are adding diverse
grains - some without gluten. We are milling grains fresh for our pasta,
and fermenting our own pasta. The biggest idea from this is to build an
environment, invite chefs and bring in the best foods possible to people
all day long."
