What does clean
label mean?
A 2017 GlobalData report asked consumers what the term clean label
meant to them. Their responses were paired against 2015 answers.

them a clear understanding of the food sourcing with the products
they consume."
As such, sales for clean label foods have been on the rise while sales
of conventional products are stagnant at best. Nielsen data shows
that demand for clean-label fresh cookies sold at instore bakeries and
clean-label soups sold at instore delis were up sharply.
Clean-label fresh cookie sales jumped 31 percent while soups were
up 18 percent. The report said that sales of grocery products with
"transparent attributes" are significantly outpacing sales of conventional products.
"Transparency is big business, and more importantly, it's growing sales,"
the report says. "Across the fast-moving consumer foods landscape
in the U.S., sales of products with transparency claims have grown 9
percent over the last year and now represent 31 percent of sales."
Meanwhile, at last summer's Institute of Food Technologists annual
meeting and expo in Las Vegas, clean label was a common theme.
"As consumers get smarter, they are pushing toward whole foods with
ingredients and purpose," John Stephanian, director of culinary development for Wild Flavors & Specialty Ingredients, says.
Cleaning up the instore bakery
Sargent says that like everything else in the food industry, today's
ingredient-conscious consumers are driving the trend toward simplified ingredients.
"They are searching for products with cleaner labels, yet they do not
want to compromise on taste or texture, especially when it comes to
indulging in their favorite baked goods," she says. "Pristine cake mixes
