recent high of 146 in 2000. It means that
per capita consumption in 2003 was the
same as in 1990, wiping out the signiﬁcant
gains of the intervening years.

Two quarters top 100 million cwts
The 2003 summary places output in
two quarters, the third and fourth, above
100 million cwts, though the preliminary
numbers had shown only one quarter at
that output level.
Output in all four quarters in 2003
rose in the ﬁnal summary compared
with preliminary ﬁgures. The increases
from preliminary estimates ranged

between 694,000 and 814,000 cwts, compared with cuts of between 684,000 cwts
and 2,235,000 in 2002.
The past year was the second consecutive in which the ﬁnal quarter's ﬂour production was not the largest for the year,
with July-September gaining that position.
The last time this happened was in 1996.

Changes in capacity numbers
Quarterly estimates of U.S. daily ﬂour

milling capacity in the 2003 ﬁnal summary showed gains ranging from 22,000
cwts to 35,000 over preliminary data.
In the ﬁnal quarter of 2003, daily ﬂour
milling capacity was 1,512,064 cwts,
up 12,202, or 0.8%, from 1,499,862 at
the close of 2002. That compares with
1,531,035 at the end of 2001, which was
the all-time high for the fourth-quarter
numbers.
Average daily milling capacity in
2003, based on the summary revisions,
was 1,510,000 cwts, compared with 2002
at 1,487,000 cwts.

ranged from 89.7% in July-September to
84.1% in April-June, while the variation
in 2002 was between 90.1% in July-September and 85% in April-June.

Wheat grind down, millfeed up
Along with the 2003 summary's upward
revision in ﬂour output, as compared with
preliminary quarterly data, the ﬁnal wheat
grind and millfeed also increased.
Wheat grind by mills in 2003 totaled
889,188,000 bus, up 13,118,000, or 1.5%,
from the preliminary numbers but down
226,000 from 889,414,000 in 2002. Grind
reached 914,036,000 bus in 2001 and in
2000 set the record at 944,868,000 bus.
Millfeed production for 2003 rose
250,185 tons, or 3.7%, from the preliminary total to 7,029,371 tons and gained
136,377, or 2%, from 6,892,994 in 2002.
It was 7,274,979 in 2001 and 7,374,115 in
2000, the record.
Average ﬂour extraction in 2003, indicated by summary data but calculated by Milling & Baking News, was 74.3%, compared
with the preliminary indication of 74.8%.
Extraction in the past year was up substantially from 73.7% in 2002 and 73.8% in
2001. The ﬂour extraction rate in 1997 was a
record 76% and in 1996, it was 75.5%.
After two years of increases, semolina
production and durum grind showed
slight decreases from the preliminary
quarterly data, in contrast to the upward
revisions in the overall ﬂour numbers.
Semolina output was placed in the
2003 summary at 29,691,000 cwts, down
49,000 from the preliminary quarterly
data and down 2,720,000, or 8.4%, from
32,411,000 in 2002.
Durum grind in 2003 was 64,294,000
bus, down 95,000 from the preliminary
ﬁgures and 7,328,000, or 10.2%, from
71,622,000 in 2002.
The semolina extraction rate in 2003
averaged 77%, up from 75.4% in 2002,
74.7% in 2001 and 75.9% in 2000. MBN

1,291,000 cwts, up from the preliminary
1,281,000. Daily average output compares with 1,285,000 in 2002, 1,318,000 in
2001 and 1,372,000 in 2000.
Reﬂecting increases in ﬂour output and
also in capacity, the operating rate of U.S.
mills in 2003, as estimated by Milling &
Baking News, decreased one percentage
point from the preliminary data to average 85.5% of six-day capacity. In 2002, the
average operating rate was 86.5%.
