University of Minnesota to sponsor
whole grains health summit in May
MINNEAPOLIS - Those looking to
make sense of the whole grains issue
and its new role in light of changes in
the Dietary Guidelines for Americans
will have an opportunity in May at a
three-day conference being offered by
the University of Minnesota.
"Whole Grains Health: A Global Summit" will take place May 18-20 at the
Radisson Plaza hotel in Minneapolis,
bringing together biological and behavioral scientists, health educators, food
technologists and regulators in a forum
to examine the latest scientific data on
whole grains and health.
Representatives from government, academia, industry and health organizations
will use the conference to help achieve
several objectives, including assessing the
quality of the latest data on whole grains
and health, reviewing gaps in the data
and setting research priorities, identifying
barriers and motivators to whole grain
consumption, exploring new technologies in whole grain foods development,
discussing consumer-friendly public

policy and labeling, examining effective
methods to communicate about whole
grains, and discussing
the long-term research
agenda for whole grains
and health.
The three-day meeting
will feature interactive
discussions,
keynote
speakers, panels, forums
for the presentation of
papers, poster sessions
and other opportunities
to consider the future of
whole grains research.
On May 18, topics will
range from whole grains'
role in fighting diabetes,
obesity, heart disease and cancer, to the
technological challenges and opportunities of whole grains.
Julie Miller Jones, a professor in the
Food and Nutrition Department at the
College of St. Catherine in St. Paul,
Minn., will examine consumer confusion surrounding the different defini-

"Milling Operative of the Year" award,
which recognizes excellent performance by
a miller. Established in 1986 by Milling &
Baking News, the award will be presented

in May to the practicing milling operative who has made the most significant
contribution to the progress of a plant, a
company and the industry from an operating point of view.

Home Baking Association in search of
creative baking educators
TOPEKA, KAS. - The Home Baking Association is offering baking educators with a
flair for creativity an opportunity to win $1,000 and a trip to the association's annual
meeting this September in Charleston, S.C.
"The H.B.A. believes baking plays an important role in the development of healthy
children that are socially and academically well-rounded," the H.B.A. said. "Each
year, the association seeks to award educators who have implemented outstanding
programs that teach children to bake."
This year, the H.B.A. offers two categories for educators to enter. Category 1 is designated for Family and Consumer Science teachers who teach baking in the classroom.
Category 2 is designated for educators who teach baking in community programs
such as 4-H, Boys and Girls Clubs, Camp Fire USA and other after-school or community programs.
Last year's Category 1 winners were Joan Eckert and Joanne Cadden, Family and
Consumer Sciences teachers, Marlton Middle School, Marlton, N.J., for their "Bread
Science" program. The Category 2 winner was Joyce Esfeld, Great Bend, Kas., for her
"Yeast Bread University" program.

Kathy Weimer of
General Mills, Inc. will
update participants on
global whole grain regulations and guidelines for
claims, labels and seals in
the United States and the
European Union.
The conference will
conclude May 20 with
a focus on where whole
grains
are
headed.
Joanne Slavin, a professor of Food Science and Nutrition at the
University of Minnesota, will present
on increasing consumer appeal through
product innovation and promotion.
The conference will include a tour of
the Mill City Museum.

panel of I.A.O.M. officers.
