Dairy Products
Tight supplies of nonfat dry milk
(N.D.M.) continued to dominate developments in the dry dairy market. Prices
advanced 1@2c a lb, with prices for
some classes up 10c since late October.
Shipments in some regions were up to
a month late, with limited spot material available. The shortage has boosted
demand for other dry dairy products to
substitute for N.D.M., as well as for soy
flour. Material was being offered from
New Zealand and South America.
Dry whey and buttermilk powder
were up 1c a lb, and whey protein concentrate up 2¼c a lb last week. Supplies
were tight and demand strong. Bakers
and other food manufacturers snapped
up available supplies of dry buttermilk,
competing with nontraditional buyers
seeking it as a substitute for N.D.M.
Cheese prices continued to post strong
gains amid good seasonal demand and
tightening supplies. Production remained
seasonally light, but yields have been
very good because of high fat and protein
content. Mozzarella supplies were tight
in all regions as production was limited
by the shortage of nonfat dry milk.

Butter prices were steady to firm. Production was steady. Inventories were larger
than a year ago but were being drawn
down at nearly twice the pace as last year.
Thanksgiving demand was good and endof-year holiday orders have been strong. MBN
Egg Products
Egg products were mostly higher again
last week as tight availability of breaking stock continued to limit production.
Soaring prices of graded eggs continued
to attract supply that usually would go to
breakers. Some processors were unable to
buy breaking stock, with egg producers
getting nearly twice as much going to retail
channels. U.S. breaking stock inventory last
week was down 11% from a week earlier.
Dried whole egg, yolks and blends were
up 5c a lb last week, while whites jumped
15c. Inventories of most dry products
were adequate to meet demand but were
being reduced quickly, with whites being
in shortest supply. Business was good but
was expected to drop off over the holiday.
Frozen whole egg and sugared yolks
were 1c a lb higher, with whites up 2c and
salted yolks up 3c. Liquid whole and yolks
were 1c higher, whites unchanged. MBN
Cocoa
Cash cocoa prices were unchanged last
week in a quiet market ahead of the holiday. Sizable moves, both up and down,
in New York futures prices were mostly
the result of speculative activity.
Arrival of cocoa beans at Ivory Coast
ports through mid-November was well
behind last year's early-maturing crop,
and bean quality has been poor. Blackpod
fungus in Nigeria and Cameroon crops
was expected to reduce output there. MBN
